Objective
The student will find and be able to apply guidelines and legislation related to the food industry. The student will master the significance of hygienic practices and self-monitoring for food safety. The student will be familiar with the food industry regulatory authorities and their functions. The student will develop their skills in information retrieval.
Content
The principles and content of the European food legislation applied in Finland in general terms. Hazard and risk factors related to food. Food hygiene. The HACCP system and planning and implementation of self-monitoring. Food control.
